Autumn Cove Presents Ideas for Your Summer Cookout

How about a frosty watermelon cooler to start with? Simply give frozen watermelon chunks, a banana, a drizzle of honey and a squirt of lime juice a whir in a blender, adding a little water if needed to reach the right consistency. Serve in a tall glass with a straw for a refreshingly different thirst quencher.

How about throwing a little meat on the grill? Cut chicken breast or pork sirloin into bite-size chunks. On a wooden skewer, alternate chunks of meat, slices of red and green pepper and a piece of pineapple. Make a marinade of orange marmalade, bottled barbecue sauce, and soy sauce and brush liberally over skewers. Place on grill rack and allow to cook until meat is done and peppers are fork tender.

watermelon slushieFor an unusual side, cut watermelon into 2" slices and drizzle with balsamic vinegar and a bit of olive oil. Sprinkle with a little pepper and grill for a few minutes on each side. This process is also great with slices of fresh pineapple.

Finish off with some grilled baguette slices. Brush slices with olive oil and butter blend and grill until toasty and grill marks appear. Rub grilled slices with a crushed garlic clove and sprinkle with sea salt.

And a backyard barbecue wouldn't be complete without a great dessert. Using a sharp knife make a cut from one end of the banana to the other (leave inside the peel) without cutting all the way through. Spread open and fill with chocolate candy bar pieces, marshmallows and nuts if desired. Wrap in heavy foil and just as your ready to turn the grill off, place banana bundles in the grill and allow the residual heat to melt the chocolate and marshmallows. Serve warm with ice cream for a great finish to your dinner.
